French Fry Loaded Nachos

There are so many ways you can make these, the possibilities are really endless. We make ours with potato cheese, but you could use whatever cheese you like and works with your family. We also use cashew “sour cream” instead of regular sour cream. The toppings are whatever you like on nachos! Feel free to be creative.

French Fry Loaded Nachos

FRIES

10-12 Yukon Gold Potatoes

Great the oven to 425 degrees F. Peel the potatoes if you want to and cut them into fries. Bring a large pot of water to a boil with enough water to cover the fries. Submerge the cut potatoes in the water and return to a low boil, boiling for 5-7 minutes until just cooked through but not mushy. Drain the water and use a clean towel to pat away as much extra moisture as possible from the potatoes. Line two baking trays with parchment paper and spread the potatoes between the two trays in single layers. Be careful not to overcrowd the trays. There needs to be some space between the potatoes. Bake the potatoes for 20minutes, flip and bake them for 20 minutes more. Alternatively, you can place the potatoes in an air fryer at 325 degrees F for 30 minutes, stirring occasionally.

POTATO CHEESE

2 medium-sized potatoes, peeled and diced
1 medium-sized carrot, peeled and diced
1 clove garlic
2 tsp onion powder
1/2 tsp paprika
1/2 tsp turmeric (adds a beautiful orange color)
1 tbsp lemon juice
Salt + pepper to taste

Place the diced potatoes and carrot in a steamer or colander set over a pan of boiling water. Cover with a lid or tight-fitting foil and steam for 10-15 minutes, until tender. Alternatively, you can boil until tender, or you can use an Instant Pot to steam. Remove from heat.

Add the steamed potatoes and carrot to a blender along with the garlic powder, onion powder, paprika, turmeric, lemon juice, sea salt, and water. Blend until smooth.

This recipe makes a lot of potato cheese, so I keep it in the fridge for other things like mac and cheese, or I put it in baggies and freeze it for later!

CASHEW “SOUR CREAM”

1 cup raw cashews
1/2 lemon, juiced
1/2 date, peeled, pitted
1 garlic clove
1/2 cup water

For the “sour cream,” blend all the ingredients until smooth, adding 1/2 cup water slowly (just enough to keep things moving). You can keep it thicker or you can add more water slowly to get a nice drizzly sauce, too.

BUILD YOUR NACHOS

Take your freshly baked or air fried fries and top with your cheese, add whatever toppings you desire (we love tomatoes, olives, black beans, avocado or guacamole, and red onions), drizzle some cashew “sour cream”, and enjoy!
