Mushroom Carnitas

4 cups shredded oyster mushrooms
1 tsp chipotle
1 tsp smoked paprika
1/4 tsp salt
1/4 to 1/2 tsp cayenne (optional)
2 tsp water (helps spices stick)

Preheat oven to 400. Mix ingredients in a bowl and lay it out on a parchment-lined baking sheet in an even layer. Bake for 15-20 minutes, stirring once until the carnitas are browned and crispy. Serve with roasted onions and peppers, living lettuce, tomatoes or homemade salsa, and guacamole.
