Potato Bowl Variations
Potato Bowls are one of my favorite meals, so comforting and so nourishing.
Potatoes are a mainstay here. We believe in carbohydrates, not the crap kinds that are processed and stuck in a box, but the kind that comes from nature like potatoes and fruits and vegetables.
You can pretty much make a bowl however you want, but here are some of my favorite tips and tricks to making a quick and easy meal.
-Steam potatoes and keep them in the fridge. You can either reheat them in the microwave if you use one, or even better would be tossing them into an air fryer, or alternatively, you could toss them into a skillet. The last two options are my favorite for a crispy finished potato.
-Alternatively, you can use roasted or baked potatoes.
-Keep it simple and add choose a veggie that’s easy to steam, pre-steam, or use leftovers. My favorite veggies in my bowls are cauliflower and broccoli. I also love to use cauliflower rice.
-Add some raw veggies, I obviously love tomatoes.
-Add beans if you want.
-Top with a sauce. I love hummus or guacamole, and a drizzle of coconut aminos (tastes like soy sauce).
-I sometimes add a sprinkle of something like Everything But The Bagel seasoning, but always some salt and pepper.
Pretty much the sky is the limit. You can use any kind of potato, veggie, beans, sauce, that you like. If you are a meat-eater, you could easily add some to your bowls, as well.
